For some unknown reason, I didn’t know about the existence of Dijon mustard until fairly recently, and even when I began hearing about it I wasn’t too hyped about giving it a shot because I could only picture yellow mustard. However, I gave in one day and will never go back! Because of the Dijon in it, this dressing is tangy and delicious in all the right ways.
Lime Dijon Vinaigrette
Prep time: 5 minutes Cook time: 0 minutes Total time: 5 minutes
Yield: 1 cup
1/2 cup apple cider vinegar
1/4 cup Dijon mustard
1/4 cup olive oil
Juice of 1 lime
1. Whisk together all ingredients in a bowl and serve. That’s it!
2. If not serving immediately, store in a sealed container in the fridge. Don’t be alarmed when the oil and vinegar separate – you can just mix it all back together before serving.
